Hi everyone! My 8 year old son is not into breakfast lately. He is an amazing eater usually, but weekday breakfasts have been a struggle. Lately, he's only wanting to eat fruit and sometimes a yogurt before school. It is starting to cause hanger issues at school, etc. We have gone through the phases of waffles or pancakes, scrambled eggs, oatmeal, cereal and he doesn't want any of those things anymore. Anything successful breakfast items your kids love lately?

We make something we call "The Good Sandwich," and honestly, have eaten it for breakfast, lunch, and dinner before. What I'll do is toast sourdough bread, add hummus, avocado, onion, a power greens mix, tomato, cucumber, and cheese for my kids (either cheddar or pepper jack). They love it. You could also add bacon and eggs to make it extra hearty.

We will also make egg muffins or protein muffins. The egg ones usually have greens and sausage in them and are easy to grab on the go. For the protein muffins, I'll use Greek yogurt, protein mix, honey, banana, flour, baking soda, baking powder, cinnamon, and sometimes chocolate chips for a treat.

If he wants yogurt, I'd try making him a smoothie. Frozen fruit, Greek yogurt, your milk of choice, protein powder, and a banana can be pretty filling.
