    I'll start! We almost always have several Asian-inspired staples in the cabinets. I'll take basic freezer aisle dumplings and throw them in a quick and easy sauce. Serve with a side of rice and it's an easy dish. The sauce is just soy sauce, sesame oil, rice vinegar, brown sugar, green onions, cilantro, sesame seeds, gochujang or siracha, and some chili oil if I have it on hand. (see thread photo)

    Rice Bowls - I do variations of rice bowls to help clean out the fridge once a week and to use budget friendly protein sources.
    • Leftover chicken + peppers, onions, beans, corn + cheese + toppings such as cilantro lime dressing = Burrito bowl.
    • Rice + Teriyaki chicken + pineapple, shredded coconut, cabbage, shredded carrots = Hawaiian bowl.
    • Turmeric rice + grilled chicken, feta, Shirazi salad, leftover pasta + garlic lemon sauce = Mediterranean bowl. 
    • Rice + korean bbq + various veggies + kimchi + fried egg + bibimbap sauce = korean rice bowl. 
    The variations are endless and delicious.

    I love making pinto beans in the Instant Pot. No soaking required. THIS is a basic recipe just using water and beans which will give you the base for many delicious options for the week . . . tacos, burritos, taco salad, stuffed baked potatoes, beans & rice, beans & cornbread, chili, etc. You could add broth, onions and peppers, or spice variations (cumin, chili powder, etc.) as desired for more flavor.
